Fruity de Gallo

I'm not even sure what "pico de gallo" literally means, and I may have made a fool of myself with that title. I'm sticking with it though. It has a nice ring to it.

We typically have a lot of fruit sitting around our house, especially during the summer. Part of me wants to puree/cook/bake with it and create something new, but honestly, there's nothing better than a good piece of fruit as is. So, in order to fulfill my urge to create something but still preserve the "wholeness" of my fruit, I made a compromise. We eat a lot of pico and chips around here, so I thought a sweet version might be tasty. It's also something portable enough to take out on park days.

Sophie and Steve practically inhaled the first bowl I made. I'm pretty sure this is a keeper :)





Coco-Kiwi Mango Salsa with Cinnamon Crisps

For the salsa:
4 kiwis, peeled and diced
1 mango, peeled and diced
3 T shredded coconut (toasting is optional, but recommended)
juice from half a lime (about a tablespoon)
1 tsp raw/turbinado sugar
pinch of salt

For the chips:
3 flour tortillas
1 melted butter
1 T sugar
1/2 tsp cinnamon

Combine salsa ingredients and stir well. Refrigerate until ready to serve.

To make the chips, slice the tortillas into wedges (6 per tortilla). Combine sugar and cinnamon in a small bowl and set aside. Heat a nonstick skillet over medium heat and working in batches, arrange as many tortilla wedges you can get into the pan in one layer. Cook for a few minutes, flipping halfway through, until tortillas begin to crisp up. Remove chips from pan, brush them with a little melted butter, and sprinkle with cinnamon-sugar mixture. Flip and repeat on the other side of the chips. Serve with fruit salsa.

Makes about 3-4 1/2-cup servings.

  1. Oh yeah...I'm sitting here drooling...coconut, mango AND kiwi all on a cinnamony tortilla? Heaven. Where do you get your mangoes? Honestly, since leaving Hawaii, the only place I was ever able to find nice mangoes was in Boston...an Indian coworker used to get them at an Indian market there and bring them to me. The ones I find at the grocery store are sad, small and too tart...and little meat to them.

  2. Alyssa... you made me realize just now that this is the third recipe I've posted with mangoes in it. LOL. I really didn't intend to do that, nor am I a mango fanatic. They're good, but I'm not obsessed. :)

    I guess I'm lucky to live in California where the produce is pretty amazing most of the time. I get most of my mangoes at the grocery store. I bet you could use chopped frozen mango chunks in this, too.

    Like Alyssa, I'm in TX where produce is pretty terrible all the time... I might have to try it with the frozen chunks.

  4. this sounds soooooooo good!!! I absolutely love cinnamon tortillas!! and mangoes...and kiwis...gonna have to make this for ME, not gonna share lol

    do you guys have Los Compadres stores? or something similar? basically stores that carry mainly hispanic food? anyway, the reason I mention this is that here in Vegas, they usually tend to have the better produce & fruits...better than the grocery stores and cheaper too...the mangoes that they carry are really good size and juicy with lots of fruit
