My Favorite Lunch

Once upon a time I had some turkey bacon and tomatoes. At the same time. And because I love BLTs and quesadillas, I thought I'd marry the two together. They're a very happy couple.

These little wraps are perfect for lunch. They're hot, they're quick, and they're not peanut butter and jelly. (I may be the only person in the world who isn't fond of PB&J . . . and peanut butter in general. Sorry.) Anyways, I made these with some friends a few days ago during a lunchtime play date and everyone loved them! They were tested out on three 2-year-olds, too. One ate it all, one picked out the bacon, and one ate just the cheese and spinach (that would be my child). Not bad.

Our very own Marisa tried them, too, and even blogged about it! (I was so flattered!)

OK, enough yapping. Here's how it went down:

It's pretty straightforward, I think. It's a good idea to have everything ready to go before you start because once the quesadilla is cooked, you need to work fast. Otherwise the cheese will cool off and glue your tortilla shut.


Yes, that is my dryer. Yes, it's in the kitchen. Yep, the washer's in there, too. And yes, it drives me crazy, but I'm thankful for the extra space to put my cutting board on.

While I'm at it, I might as well tell you one of my favorite kitchen do-dads -- the squirty bottle. You can get these at Bed Bath & Beyond for $1.99 or any restaurant supply store. I have two. One for ranch dressing (I mix mine from a seasoning packet. It's tons better that way.) and one for whatever else I feel like. Like chocolate sauce. Or strawberry sauce. It's easy to do frou-frou plating with these. People will think you're fancy.


A couple more comments about the wrap...

1. I used fresh spinach, so technically it's a "BST", but that sounds stupid. Feel free to use lettuce.
2. I used turkey bacon. I actually like turkey bacon better than regular bacon. It's a texture thing with me. I can't stand chewy, fatty parts of meat. *shudder*
3. I am completely in love with uncooked tortillas. Once I started buying them, I never went back to the old ones. I find them at Costco here. They're freezable, and when I make quesadillas, I don't pre-cook them. I treat them like a regular old (not as good) tortilla.

BLT Quesadilla Wrap
an original recipe by Natalie

1 tsp butter or nonstick spray
1 flour tortilla
1/4 c shredded cheese
3 slices of cooked bacon, cut in half
2-3 tomato slices
a little spinach or lettuce
Ranch dressing (If you don't like Ranch, you can use mayo. Or leave it out entirely.)

Heat a large skillet to medium heat. Add butter to skillet and allow to melt. Lay the tortilla in the skillet and add cheese and bacon to one side of the tortilla. Fold in half. Cook for about 5-6 minutes, flipping halfway through, until both sides have brown spots and the tortilla is somewhat crisp.

Transfer quesadilla to a plate and open it very carefully (If you're smart, you'll use tongs. I'm not.) Lay the tomato slices and spinach leaves down the middle (see photo). Drizzle a little ranch dressing over top, then beginning at one side, roll the tortilla up. Eat immediately. Before someone sees you and wants a bite.

Makes one wrap.
