Little Pumpkin Muffins

I wanted to make something pumpkin-y for the Fall season, and these little muffins were just the thing to make our kitchen festive. I had photos for a whole tutorial, but alas, I deleted them by mistake. Never mind... these little pumpkins are super easy to make!

Ingredients:
  • Muffin mix (mine comes from a box because I'm the world's worst baker and thought this would be easier - it was) I tried to find pumpkin muffin mix, but was unsuccessful. So I used orange cranberry instead and they were mighty fine.
  • White chocolate - for the candy shell
  • Frosting - any flavor that tickles your fancy!
  • Green candy for the stem (I used a Twizzler, but sour strings and fruit roll-ups also work)
  • Food coloring - orange (or red and yellow, which is what I used)
  • Optional black gel frosting tube if you want to make a jack-o-lantern

1. Bake muffins in mini muffin tins, according to recipe. You will need TWO mini muffins per pumpkin. Also, make sure NOT to fill the tin all the way - you will be cutting the muffin top off, so try to keep it from overflowing as it rises in the oven.

2. When muffins are done, and cooled, and the muffin tops have been shaved down, have kids spread frosting on the top of the muffins, then place two muffin's together with the frosting in between.

3. Melt white chocolate in a microwave safe dish and add food coloring to turn it orange.

4. Spread melted chocolate over muffins, then add the stem and pop it into the fridge for about 10 minutes to harden the white chocolate.

5. Eat!
