Managing Mealtime
The days are dwindling. In less than a week, I'll be back to work. Just about everything here at home is in order. Just about. Now is the time where I have to start planning ahead for dinners during the work week. With our schedules, by the time we have the kids rounded up from school and get home, it will be smack in the middle of their normal dinner time. There won't be a lot of time for cooking a full meal, which means things will have to be cooked ahead of time (most likely the weekend before) and ready to heat and eat during the week. I'll be honest...I need help.
More often than not, I'm not a big fan of food reheated in the microwave because it rarely tastes the same as it would fresh off the stove. I just don't see how we can get around it with the limited time we'll have every night. I'm hoping some of you brilliant Mommies can share quick fix dinner ideas with me...things that are tasty, easy to prep ahead of time and reheat later, and that are healthy...or at least reasonably healthy! We are pretty big poultry eaters. We love beef and pork but none of us are big seafood fans. Post your favorite recipes or drop some links to recipes that I can try out. I'm hoping for a nice arsenal of meals that I can rotate from week to week so that we don't get too bored eating the same meals. I'll keep you posted on how my dinner planning works out!

ReplyDeleteChicken sitr fry, is sooooo quick and easy..
ReplyDeleteIf you bake a few chicken pieces at the weekend and put them in the fridge, you can pull them apart either the night before you want them or right after they are cooked. Prepare the veggies that you like in your stir fry and then on the night of the week you want to eat stir fry.. come home put the pan on, throw it all in , add a bit of stir fry mix, and then in approx 5 - 10 minutes dinner is ready.. I used microwave minute rice which takes about the same amount of time and Voila! Healthy dinner from scratch in 5 - 10 minutes.. :)
There are tonnes of slow cooker recipes on the internet, that are delicious.. If you put the stuff in the crock pot in the morning before you leave for work and put the crock pot on low, it'll smell absolutely delicious when you walk in after work.. :)

ReplyDeletehere's an easy crockpot recipe you can throw together before you leave the house....
ReplyDeletetake some boneless skinless chicken breasts (however many your family would eat) and toss them into the crockpot... dump a jar of salsa over them and cook on LOW all day. sometimes i throw in a can/bag of corn for extra veggies if i feel like it. when you get home, cook some rice (we like the steam fresh brown rice that you can pop in the nuker for 4 mins). serve the chicken/salsa/corn over the rice and VOILA! easy meal and yummy!
Well, I'm incredibly boring, and my go-to meal is usually a baked pasta... but that is quick and easy and no one here is bored yet (surprisingly!!)
ReplyDeleteSketti sauce in the crock pot is always good. Ummmm, trying to think (it's not working too well)... Dinners have been kinda throw together lately, what with all the cupcake baking that's been going on! Grilled cheese or quesadillas are super simple!
