Zucchini Purge

Just after I bought a few zucchinis at the grocery store, we end up bringing this monster back from my in-laws one weekend, courtesy of their garden. Seriously . . . I had zucchini coming out of my ears. I'm sure I'm not the only one, though. Here are a few of my favorite zucchini recipes!


Sausage & Zucchini Pasta Toss : This is one that I created myself on one of those "cleaning out the fridge" dinner nights. It comes together really quickly, especially if you use pre-cooked sausage.






Bacon-Wrapped Chicken Kabobs is one of my favorite grill recipes. Zucchini plays very happily grilled (or roasted) with other vegetables. (I really need to get a shot of these when they're cooked.)




Grilled Zucchini Pizza is to die for. The zucchini is grilled and so is the whole pizza! If you've never tried grilling pizza, pull out the grill and try it before it gets cold!





Stuffed Zucchini with Ground Turkey: These are simply hollowed out zucchinis stuffed with a mixture of ground turkey, vegetables and fresh herbs. Using fresh herbs makes a big difference here.








I found these Zucchini Cakes over on Pioneer Woman's site. Any PW fans out there? You can put pretty much any type of squash or shredded vegetables and any seasonings in these. They're very versatile . . . and delicious!



Grilled Zucchini Lasagna is basically the way my mom makes it -- with a few minor changes. Over the years she's tweaked the recipe to absolute deliciousness, while still keeping it simple. I think it's the pan she cooks it in. (It has wavy sides like traditional lasagna noodles have). And love. Lots of love.



I made these Zucchini Cupcakes with Caramel Frosting last summer on a pregnancy craving whim and was so glad I did. Yes, the zucchini makes you feel halfway healthy while eating a cupcake, but the frosting was my favorite part.
